Chipe Libre is a Restaurant & Pisco Bar that opened its doors in October 2015, inspired by an imaginary country composed of all regions with a Pisco appellation of origin in the world, meaning northern Chile and southern Peru. "Pisco," tired of so many conflicts claiming its "true origin," rebelled, moved its borders, and created its own independent republic. CHIPE LIBRE! The Independent Republic of Pisco! It owes its name to CHI for Chile, PE for Peru, and LIBRE for the Freedom and Revolution of Pisco.
CHIPE LIBRE was born as the "Pisco Showcase" to the world, giving this noble national distillate the space it deserves by highlighting its origin, its history, and its great versatility as a base spirit for world-class cocktails and the perfect accompaniment for a cuisine of "expressive and explosive" flavors.
Chipe Libre is a Restaurant & Pisco Bar with one of the longest bars in the capital, offering a selection of more than 120 different piscos, and a terrace that is an oasis in the middle of bustling Santiago, featuring tropical music, eye-catching pisco-based cocktails, the best selection of Pisco Sours, and hearty "Chipeña" cuisine; inspired by ingredients and/or recipes from Chile and Peru, highlighting ceviches, tiraditos, saltados, and substantial bites designed to accompany the cocktails.
